Gruyere cheese was called so after the place where it was first made. It doesn't differ from other cheeses, for example, Wisconsin cheese or Gammelost, as regards this part of its history. But it definitely deserves particular attention due to its other characteristics. Gruyere cheese is made of unpasteurized cow's milk. The texture of this tasty cheese is pressed and hard. It gets a sharper flavor when cured longer. Like other cheeses, Gruyere cheese has a wide range of flavors, which depend on aging period. When it is young it may seem creamy and nutty; as the cheese is aged a little it acquires a more assertive and earthy taste. It is interesting to know that when Gruyere is fully aged, over 5 months, it gets holes, which are not observed when it is young.
