Swiss Gruyere is made of unpasteurized cow's milk and has a hard texture. You can distinguish it by its color, which is dark yellow. You can cook almost anything with it, but the best flavor it has in Gruyere fondue. People often use this recipe in Switzerland, because they love this dish. This course is particularly good in Christmas morning, but you can cook it for all parties you are going to organize. The fondue ingredients are very different and have wonderful flavors themselves, but in the unity they acquire a great taste, which you can never forget or confuse with anything else.
If you want to cook Gruyere fondue you will need 2 green apples (the best variant is to take Granny Smith), 2 firm pears, like Bartlett, several grapes, 1 cup of fresh lemon juice, 1 garlic clove, 1 cup of white wine, for example, Gewurztraminer, 2 cups of Swiss Gruyere, 2 teaspoons of cornstarch, bread and 1 tablespoon of unsweeted cherry brandy (kirsch). First, you should fill the bowl with cold water and then add apples and pears, sliced beforehand, and 3 tablespoons plus 1 teaspoon of lemon juice. Then spread over garlic halves onto the inside surface of the fondue and heat the oven up to a medium temperature. Then combine the wine with two teaspoons of lemon juice and warm the mixture. Put Swiss Gruyere and cornstarch to the bowl and mix them very well. Then combine Gruyere with fondue in the bowl, stirring constantly, and pour the kirsch in and heat about 5 minutes, looking this mixture not to be boiling. Meanwhile, put the slices of fruits onto a plate with bread and then serve fondue.
The story of this dish is interesting. The very word means French 'to melt', and with the Swiss cheese it proves the meaning. For this dish long forks are usually used to spear a cube of bread and slices of fruits. Fondues were first used for eating in the 18th century and for these 3 centuries it hasn't lost its peculiarities and a high quality of cooking. It will be, probably, rather difficult to find this cheese at your country's supermarkets, so if you want to taste it choose Switzerland to be the destination place on your next vacations.
The traditional fondue recipes, which number is rather big, may require two kinds of cheese: Gruyere and Emmenthaler, and in general, all ingredients in fondue play a great role, and with at least one of them being absent it won`t be a fondue anymore. So, the observance of some simple rules is really obligatory if you want to get this special meal in its true taste.
