Nobody knows what made David Jacks leave his native places in Scotland and set out for the journey towards adventures. The fact it that he found Californian climate and lifestyle perfect for himself and decided to settle there. That was the year 1849. Soon this very enterprising man possessed 60 000 acres in the Monterey County and operated 14 ranches. Who may say after this that it is impossible to become rich quickly? The only thing you need is to find yourself in our world of chances and opportunities.
It is obvious that Jacks seized such an opportunity. Among his ranches there were several dairies. David Jacks organized their work together with Swiss and Portuguese partners. In 1882 (in 1916, according to some other sources) this businessman first got the Monterey Jack cheese and the very this person is mentioned nowadays when people ask about the first producer of this cheese. The fact is rather disputable, as several people were making cheese at the same place and at the same time, so all of them could pretend to be the idea owners. But nevertheless, we know exactly David Jacks as the inventor of the cheese.
An interesting fact is that though Monterey Jack is enormously popular in the United States of America and far abroad, the person who created it is not. He is said to be a very cruel and ruthless man who never wrote off debts. He was really reach and often gave loans, but when people couldn't return money he foreclosed mortgages. Definitely, his reputation was, indeed, awful.
As for Monterey Jack cheese itself, it is really popular and often-purchased. The United States of America is one of the declared cheese-loving countries and it consumes this product buying it not only from the national producers, but also European countries. The well-known state of Wisconsin makes nowadays more types of cheese than any country in the world does. The majority of them were brought from foreign cheese makers made more suitable for local population and produced with a great success. But Monterey Jack cheese doesn't have such a history. It is one of only four sorts of cheese invented in the country. Of course, the recipe includes some foreign tendencies and technologies, but the product itself is a merited luck of the American masters.
When visit the USA pay attention to the national cuisine. Though due to a quick development of the McDonald's network it seems that we know everything about the American food, it is not so at all. It is absolutely impossible to know the cuisine without visiting the country.
