When visiting Italy it is definitely impossible to avoid cheese in food and particularly Gorgonzola cheese, so far as this type of cheese is one of the favorites in the country. Though this fascinating state annually attracting thousands of tourists produces tens, if not hundreds, of cheese sorts, there are only three of them, which have a Protected Designation of Origin status. The other two are Toma and Mozzarella. So, when buying Gorgonzola cheese you are always sure in its quality and accordance to the world standards and requirements of cheese making.
What is this cheese like and why is it so popular? It is colored from white to straw-yellow and its green or bluish-green mould is really unique, so you will never mix this sort of cheese with any other. If you are a cheese-lover you should know that Gorgonzola`s flavor is always different depending on aging period. Most cheeses, Gorgonzola cheese being not excluded, have a mild flavor and a soft, smooth texture when young; when matured, they become sharp in taste and firm in touch.
The two variants of Gorgonzola cheese have the names of Dolce Gorgonzola and Mountain Gorgonzola. Dolce Gorgonzola has an unmistakable creaminess and a pale-white color with blue lines. The flavor of the cheese is a little piquant and thus, Dolce is wonderful as a table cheese and an ingredient for various salads. Mountain Gorgonzola has a sharper flavor and a firmer texture. It can be added to salads, but the Italian like it very much when served on a plate, drizzled with honey. They say it is accenting a wonderful cheese taste.
The most interesting and often used variant of cooking with this cheese is Gorgonzola sauce. There are really amazing recipes with absolutely different ingredients, and even if you use the same cheese you will get totally different dishes, which won't resemble each other even a little. It is not so difficult to get interested and excited with cooking if you have such a wonderful ingredient as Gorgonzola cheese.
