Added: 11/16/2005

Some people probably hate fish for the reason they have never eaten it fresh. How do you recognize fresh fish? Is it by a clear color of its flesh and a fresh sea flavor? These are the main criteria of fresh fish determination. However, fishermen consider that only they eat actually fresh fish, which they have just caught. The taste of just caught fish is beyond any word description, unfortunately, we are not able to go fishing everyday in order to enjoy the taste of the freshest fish.

Anglers consider that only they have an advantage of eating truly fresh fish. They say that eating freshly caught fish is one of the joys of fishing, however, also having its pros and contras. The taste of any just caught fish is indescribable, but the filleting process of 'warm' fish itself spreads bacteria through the flesh. We suppose that the majority of them die when the fresh fish is cooked. Hence, some experts consider that the fish should be frozen prior to cooking. Then, fresh fish also has numerous internal bacteria, which die in the process of freezing. If you cook fresh fish, which you have just caught, you should cook it properly so that it would not be only half-prepared.

The recommendation for those, who do not like fish: experience the taste of just caught fish and your opinion about this product will change considerably, if not oppositely. Moreover, we can eat freshly caught fish not only when going fishing. Many seafood restaurants today offer their clientele to try absolutely fresh seafood, which is simply swimming in their build-in tanks with water. Here you can enjoy not only your local fish varieties, moreover, also try the taste of some exotic unfamiliar species.

When buying fish in the market, keep in mind that fresh fish should have clear eyes (except for walleyed pike) and bright red, moist gills. In addition, when you press on the skin, it should not leave an indentation. Fresh ocean fish have a mild ocean flavor and fresh inland fish smell like cucumbers.

Buying frozen fish, do not buy it if the packages are open, torn or crushed on the edges. Frost in the package may indicate either long-term storage or thawing and refreezing.

There is also an opinion that it is better not to buy inland lake fish. The matter is not the freshness, but the places where they are harvested. Some experts consider that many inland fish farms were built on old agricultural lands with high levels of pesticide residues and contaminants that now leach into the waters used for raising certain types of fish, including lake trout and catfish. However, this question is rather contestable, as the other experts state that fish, raised in the farms, is the freshest and clearest ecologically. Hence, you should conduct more researches in this sphere if you are actually interested.

Having bought fresh fish, store it properly. We often complain about the smell of fish when we prepare it for the reason we have not kept it properly. There is a standpoint that fish just out of the water, left in the sun, spoils five times faster than a land animal in similar circumstances. Therefore, fresh fish, only once subjected to warmth, will bear an unpleasant taste and flavor. Thus, fishing or buying fresh fish, you should cook or freeze it immediately. The taste of fish also changes if it is frozen and defrozen several times.
