Europe has old, even ancient cooking traditions. Wine, beer and a lot of other delicious and really necessary in cooking things, including cheese, were invented there. And from the very this continent the majority of well-known products of our days began their triumphal procession around the world. Try to find the birth history of famous dishes and meals - and you will see that most of them were first made in Europe. Even if they are no more produced or made there.
The same may be said about such famous product as Limburger cheese. Though it is produced in Europe nowadays, the place of its origin was not Germany. In our times the very this country makes the leading part of this sort of cheese in the world. Limburger cheese was invented in Belgium, in the province of Liege. The name of the cheese derives from the fact that this product was first sold at the markets of Limbourg city. There are also manufactories in the United Kingdom and other European countries, but their part in world producing of this wonderful snack is not big.
As for the United States of America, there is only one factory there, which makes this cheese and it is, of course, located in Wisconsin. The most 'cheesy' US state has a special permission for producing Limburger, and hereto, the Chalet cheese factory has all the possibilities to make the cheese meeting all the standards and requirements envisaged. And the standards are, indeed, very important.
Limburger cheese is not a product for everyone and it is not expected to be eaten every day. The product is rather unusual with its strong aroma and piquant flavor. Children seldom like it. Besides, they seldom like onions, though each adult knows that an onion sandwich is the best use of Limburger cheese. The most common version of this dish is to take a thick slice of cheese and that of onion and put them between two slices of bread. The best bread fit is, in public opinion, dark rye. You may also use heavy wheat breads. Anyway, it is your choice and in the modern world of wide alternatives it would be really unbelievable not to find the necessary addition to your favourite cheese.
If you like mustard you may add it into your sandwich too. And do not forget to put sardines! The taste will be really amazing! Anchovy fillets in olive oil are also wonderful with onions and Limburger cheese. In fact, there are a lot of variations and, besides, you can make something new yourself. Think out your own onion sandwich and your popularity in Germany and Belgium is guaranteed, as you will never find places where this sort of cheese is more desired and willingly-purchased than there.
And do not forget to try this cheese, even if you do not like the smell (indeed, only a few people like it). Belgians always say that to judge the cheese by its aroma is as wrong as to judge the book by its cover. Who knows: maybe, the very this sort of cheese will overshadow all your existing preferences and become your favourite in future.
