Lemon juice is the tartest of all citruses. It embodies a lot of tannin agent. One lemon yields about 2-3 tablespoons of lemon juice. If you don't like tartness of lemon juice, provide an element of sweetness by substituting it for sour mix - a mixture of lemon juice and sugar syrup. You may also meet other names of it - "sweet and sour mix" or "bar mix". All they mean just the same - a mixture of one part heavy sugar syrup with one part lemon juice. To prepare heavy sugar syrup dissolve 3 parts sugar in 2 parts water - just mix them, shake well, let sit, and shake well again. Some people add 2 egg whites per liter of mix to make the drink slightly foamy.
It is more convenient to prepare the quantity of lemon juice you expect to use during the evening ahead of time; in that case store this in a glass container that either should be kept refrigerated.
