Cheesecakes are rather easy to make, but are very elegant desserts. The top may sometimes crack. In order to keep the top from cracking, run a knife around the outside of the crust to loosen it from the side of the pan. It can happen so that your cheesecake will crack anyway. A nice garnish, being putted on the top will hidden all the crackings.
To get a better flavour make your cheesecake the day before serving. Than it will have sufficient amount of time to blend and mellow its flavours overnight. Almost always such desserts as cheesecake are eaten immediately because of its delicasy. But they also can be kept well for two or three days at least. The baked variety can even be made a couple weeks in advance and frozen.

However, any cheesecake recipe may be cooked at home. We offer only two recipes. But they describe traditional and famous sorts of cheesecake. You can take one cheesecake recipe and bake a delicious dessert or you may try them both.
Chocolate Cheesecake sure to be a favorite if you are a chocolate lover, like many people. It would be better if you make it the day before serving. Than, as it was said it will be able chill overnight, so that the great milk chocolate flavour will develop. You'll need the following ingredients:
For the crust take 1/3 cup butter, melted; 1 1/4 cups chocolate wafer crumbs. The filling will consist of: 3 packages (8 oz. each) cream cheese, softened; 1 can sweetened condensed milk (Eagle Brand, 300ml), 8 squares semi-sweet chocolate, melted; 4 eggs; 2 teaspoons vanilla.
To make crust combine butter and chocolate wafer crumbs. Then press them into the bottom of a 9" springform pan. After the crust is ready, start cooking the filling. For it beat cream cheese in a large mixer bowl until it become fluffy. Then add sweetened condensed milk and beat again until the mixture become smooth. When this stage is over add chocolate, eggs and vanilla and mix well. This substance should be poured over crust.
Time of baking is approximately 1 hour 5 minutes at 300 degrees F. Ready cheesecake must be cooled to room temperature and kept in the refrigerator until serving.
In summer fruit cheesecakes are more likely to be cooked. There is one more cheesecake recipe. If you are fond of fruits, especially limes, you'll love this Key Lime cheesecake.
Ingredients for the crust: 1 cup graham cracker crumbs, ? cup granulated sugar and 1/3 cup melted butter. For the filling you'll need: 1 cup lime slice, ? cup water, 2 (1/4-ounce) envelopes unflavored gelatin, 1 1/2 cups granulated sugar, 5 large eggs, slightly beaten; 1 tablespoon grated lime peel, 1/2 cup softened butter, 2 (8-ounce) packages softened cream cheese and 1/2 cup whipping cream.
This cheesecake recipe includes garnish. It requires sweetened whipped cream and lime slices. It is not nesessary, but will made your cheesecake more tasty.
Well, start with stiring together all crust ingredients in medium bowl. Press the substance on bottom of 9-inch springform pan and set aside.
The second stage begins with combining lime juice and water 2-quart saaucepan and sprinkling it with gelatin immediately. Then give them a 5-minute pause. The mass should soften. When it is softened, add sugar, eggs and lime peel. Cook over medium heat, stirring constantly, until mixture just comes to a boil (7 to 8 minutes). DO NOT BOIL. Set aside.
The third part consists of beating mixed butter and cheese at medium speed in large mixer bowl. During the process add gradually hot lime mixture and scrape bowl often. The final step of the third stage is refrigerating. Stir the mixture occasionally for about 45 minutes.
You should do a little more. Beat whipping cream in chilled small mixer bowl at high speed, scraping bowl often, until stiff peaks form. Then fold into lime mixture. Pour all resulting substance into prepared crust. Cover; refrigerate until firm (3 to 4 hours). When cheesecake is cool, try to loose side of cheesecake from pan by running knife around inside of pan. You may garnish top of cheesecake with whipped cream and lime slices, if it is desired.
