Added: 05/26/2006

You like cheese very much - all sorts and variations of this beautiful, melting-in-the-mouth and really unforgettable victual you think a true dainty. You like Asiago cheese, blue Cheddar and Edam cheese - in a word, you like everything connected with cheese. If these lines are definitely about you there is an opportunity to taste at least one more variant of this wonderful grocery - brie cheese. After delighting brie cheese you will realize that hardly is any other cheese like this. This product is unique and needs special attention.

At the beginning of its history brie was made in France, but with the time going the production has moved, and now you can see this cheese made in Wisconsin, USA.  This decision can be explained by the quality of the local milk.  Hereby, nowadays the classic French cheese brie is produced in one of the beautiful America's states.

Brie cheese has a wonderful taste: when it is young it has mushroom flavor, but with ageing it gets somehow pungent.  But actually, this cheese brie is particularly good in any age, with any flavor.  Besides, it is widely used in cooking.  Thus, you may choose sandwich with cheese brie or make pasta and sauces - all the food will be great.  The texture of the cheese is creamy and rich, pale ivory colored.  And even though you have never seen it before, you will easily recognize it by its characteristic features.

If you want to make your dish or snack piquant you should take melons and eat them with a slice of cheese brie, or take grape - the taste will be no worse.  This cheese is universal, you can do anything with it - the only condition is that you should not make the same courses day by day.  Always look for new ways to cook interesting and piquant dishes with a lot of cheese and sauces.

It is especially good if you like pasta and don't know what kind of sauce to choose.  In this case brie cheese will help you - it can add some special flavor and aroma to any dish in your personal diet.
This cheese is also known as 'The Queen of Cheeses'.  And it is not a surprise for those who are fond of this product, because it is considered the best French cheese, and these words are, indeed, worth saying.

Brie is usually made of cow's milk (most people prefer exactly this kind of milk), and its fat content is about 45%.  If you want to prepare a romantic dinner or would like your dinner to be first-class you should take the Bourgogne wine in addition to brie.  It will give some new flavor, and your dinner will deserve the highest mark from your dearest person or the members of your family.

Actually, there are several types of brie cheese in the world, but a special purpose company gives the certificates approved by the French government to only two of them.  These are: Brie de Meaux and Brie de Melun.  Brie de Meaux is also known  as the 'King's Cheese' from the 8th century.  This cheese has a wonderful history and a never-doubted quality.

The legend  runs that in the early 8th century there was a French Emperor Charlemagne, and he tasted this sort of cheese once.  He fell in love with it immediately and since that time his court had to eat only this sort.  A lot of water has flown under the bridge, but even in our days this cheese is highly appreciated as the queen's one.

Brie cheese, like other sorts of this product, needs to be saved in refrigerator, but if you want to feel its tastiest flavor it should be of a room temperature.  So, take it out of the fridge before serving and let it stand a little.  Brie cheese recipes are very popular in restaurants not only in France, but in the whole Europe.  You can find new design decisions for your own cooking.  Invite your friends for a party and make a lot of brie sandwiches - it is not very expensive but tasty.  Join the world of cheese and bon appetit!
